Thai Inspired Spiralized Veggie Noodles

Ingredients

  • 1 zucchini medium-spiralized
  • 1 red bell pepper thinly sliced
  • 1 caroot large-spiralized
  • 1 1/2 cup purple cabbage thinly sliced
  • 1/4 cup almond butter can sub peanut butter
  • 2 tbsp water
  • 2 tbsp lime juice
  • 1 tbsp coconut aminos can sub tamari
  • 1 tbsp maple syrup
  • 2 cloves garlic minced
  • 1 1/2 tsp ginger minced
  • 3 tbsp hemp seeds

Instructions

  • Spiralize the zucchini and the carrot and transfer to a large mixing bowl with the bell pepper and cabbage. If you do not have a spiralizer, use a box grater or vegetable peeler.
  • In a medium mixing bowl combine the almond butter, water, lime juice, coconut aminos, maple syrup, garlic and ginger. Mix well to combine.
  • To serve, toss the veggies in the sauce and sprinkle with hemp seeds. Serve immediately and enjoy!
