Some tastes are made for a warm summer day. This combo never fails on a hot summer day pre or post-workout. It’s a perfect blend of flavors in creamy deliciousness. I always insist on using organic berries since they usually top the EWG’s dirty dozen list. Even though raspberries aren’t specifically called out (Strawberries always seem to be #1), I try to stick with organic berries whenever I can find them. Give this raspberry lemon swirl smoothie a try or serve it to a friend or family member to really impress!

Post Run Summer Treat!

This summer smoothie not only tastes like a treat, but it’s packed with antioxidants, fiber, protein, whole-food carbohydrates, and healthy fat. It will keep you full for hours and your blood sugar stable. I personally can always feel when something makes my blood sugar spike and have verified this data with my on-and-off use of CGMs. This one kept me full and going strong for about 4 hours (and this was post run which usually makes me hungrier).

I added a little design twist by using my hand-held frother to splatter the raspberry syrup (mix of raspberries, chia seeds, and monk fruit) up onto the glass. If you don’t have a handheld frother no worries you can just layer with a spoon. I do suggest getting one however since they are super inexpensive and I use them almost daily. Mainly to make my afternoon matcha latte. P.S., this syrup can be used in many ways other than in this smoothie. It’s what I used on gluten-free pancakes or waffles instead of regular syrup because I like the added flavor.

You could definitely vary the berries used here if you’d prefer to go blueberry, blackberry, or strawberry. All will work! I used monk fruit to make it lower glycemic but feel free to use real maple syrup or honey to sweeten a bit.

Some other subs that would work here:
  • use another plant-based milk
  • use any other type of yogurt (greek, cashew, almond)-I just suggest using a no-sugar-added variety
  • omit the cauliflower
  • add in some greens
  • use 1/2 banana instead of a date
  • use hemp seeds instead of a protein powder
  • omit the psyllium or sub-acacia fiber

Raspberry Lemon Swirl Smoothie

Equipment

  • 1 High-Speed Blender
  • 1 Handheld frother

Ingredients

  • 3/4 cup raspberries
  • 1` tbsp chia seeds
  • 1 tbsp monk fruit sub maple syrup
  • 1 cup unsweetened almond milk
  • 1` date
  • 1 cup frozen cauliflower
  • 3 tbsp lemon juice fresh
  • 1/4 cup vanilla protein powder
  • 1/4 cup coconut yogurt
  • 1 tbsp psyllium husk optional

Instructions

  • Over medium to low heat mix together the raspberries, chia seeds and monk fruit sweetener. Mash raspberries with fork or potato masher.
  • Let mixture cool.
  • Combine all remaining ingredients in a high-speed blender and blend until smooth.
  • Spoon half of the raspberry mixture into bottom of a glass.
  • Using a handheld frother splatter raspberry syrup on sides of the glass. If you dont have a frother you an easily just layer the mixtures.
  • Pour the lemon smoothie into glass.
  • Add the remaining raspberry mixture on top.
