One of the few things I love when the temps start to fall (I’ll always be a summer girl at heart) is all of my elixir recipes! Elixir is just a fancy name I use for my warming coffeehouse-style drinks. Many boast medicinal ingredients and none of them include the syrups, sugars, and chemicals used in those drinks you might find in your fave coffee shop. Where I live, fall inevitably brings cooler temperatures, turning leaves, sweaters, seasonal produce, and a frenzy for pumpkin-spiced you name it! Hence the pumpkin spice collagen elixir recipe. I’m totally all pumpkin Sept-November so please bare with me.

Pumpkin spice, if you make it at home with actual spices, is an incredible mix of nutrient-dense spices including cinnamon, ginger, cloves, and nutmeg. Many of these ingredients actually have proven health benefits. Cinnamon for example is known for its ability to help with blood sugar regulation. Ginger contains gingerols and is high in antioxidants and anti-inflammatory. It is also known to help with cases of nausea. I know I kept ginger chews with me at all times when pregnant.

Many of those coffee shop “pumpkin’ options are not even using real pumpkin, but synthetic syrups and sweeteners.

Here are the nutrition facts of a grande “PSL” taken from the Starbucks website compared to my version. Wow! The first thing I always look at is sugar. 50 grams! A can of coke is 39 grams for example. You also need to remember this is mainly added sugar, versus the only 3g of naturally occurring sugar in the pumpkin from my version. Another thing to consider is the fat content. My version contains MCT oil, a medium-chain triglyceride fat with studied health benefits, including weight loss, energy, brain health, and heart health. Their version is coming primarily from conventional milk fat with few health positives.

Possible Changes to the recipe below:

I love this as is because it is delicious, and filling and only raised my blood sugar by about 6 mg/dl on my LevelsCGM (continuous glucose monitor). I can’t even imagine what my blood sugar would do if I tested it with the coffee-house version.

  • Take out the MCT and Collagen if you are looking for a simplified version with fewer calories
  • Make with 1/2 cup brewed coffee vs the water and 2 tbsp of Dandy Blend if you are looking to bump up the caffeine
  • Use maple syrup if you are not concerned about blood sugar and don’t like the taste of monk fruit
  • Sub stevia for monk fruit
  • Use 1 1/2 cups water if you want to reduce calories versus the almond milk
  • Use another plant-based milk
  • Omit toppings

  • 1 hand held frother sub high speed blender


  • 1 cup unsweetened almond milk
  • 1/2 cup water
  • 1/4 cup pumpkin
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 2 tbsp dandy blend coffee alternative
  • 1 tbsp MCT oil if you don't typically use, start with 1 tsp
  • 3/4 oz collagen powder
  • 1 tbsp monk fruit sweetener
  • 2 tbsp coconut whip cream optional


  • Add all ingredients except coconut whip to sauce pan on stove top and heat to the desired temperature.
  • Use a hand-held frother or high speed blender to blend until frothy
  • Top with a little coconut whip cream and a sprinkle of cinnamon
