We are right in the heart of peach season here in Illinois as I type this recipe up! Our seasons are short here and I try to capitalize on all of them since it’s best to eat fruit and produce in season when it’s at its most affordable and tastiest. Added bonus is that when you buy fruit in season and buy too much of it you can always freeze it for smoothies and smoothie bowls!

Peaches are an amazing treat in the summer when they are at their peak. Juicy and sweet, peaches add so much flavor to homemade desserts and snacks. They are also packed with fiber, antioxidants, and nutrients making them a health win. While I’m a green smoothie girl most days, this one looks so much more appetizing without the green, but feel free to add a handful of spinach if you’d like to get your greens in.

Swap Ideas!

  • You can use fresh or frozen peaches to quickly make this refreshing smoothie bowl.
  • You can swap in any other non-cow-dairy yogurt such as almond, cashew, sheep, or goat yogurt.
  • You could make it a little lower on the glycemic range by swapping the date for stevia or monk fruit sweetener.
  • Not a fan of dates, sub 1/4 frozen banana instead.
  • If you’re not a fan of cashews, swap for almond butter, sun butter, peanut butter, coconut butter, or coconut oil/MCT oil. You are basically looking to add a healthy fat source for satiety and blood sugar stabilization.
  • Top however you like-extra oats, granola, and coconut flakes are all good options.

Equipment

  • 1 High-Speed Blender

Ingredients

  • 1/2 cup water
  • 1/2 cup ice cubes
  • 1/2 cup unsweetened coconut yogurt
  • 1 cup cauliflower rice (frozen)
  • 2 peaches (cut and frozen)
  • 2 dates (pitted-can soak to soften)
  • 1/2 cup cashews (soaked or at least 15 minutes)
  • 2 servings vanilla protein powder
  • 1/4 cup gluten free oats
  • 1/2 tsp cinnamon

Instructions

  • Soak raw cashews in a bit of water for at least 15 minutes. You may also want to soak dates to soften.
  • Place all ingredients in high-speed blender and blend til smooth. You will most likely need to use tamper to push down ingredients for first minute.
  • Divide between bowls and top as desired!
