Cashew Chipotle Aioli

I have a new obsession and it’s Cashew Chipotle Aioli. I have always loved a good aioli sauce and one of my favorite things to do is to make an oil-based aioli and serve it with a ton of various roasted veggies for a party. This can be made ahead of time and served cold, so it’s super simple and a crowd-pleaser. Another favorite go-to of mine are various cashew cheeses and sauces, so I was inspired to combine the two, and as always the more spice the better in my opinion.

Traditional aioli is a sauce made of garlic, salt, and olive oil and found in the cuisines of the northwest Mediterranean, from Valencia to Calabria. Often aioli’s are also made with mayo in the U.S.

The cashew chipotle aioli version is super simple to make with only a few ingredients and one piece of equipment necessary. You can serve it over eggs (my personal favorite), as a side with meat, and over the top of roasted veggies. It adds a robust flavor and texture to any meal. It’s also a great alternative to avocado to add fat to a meal.

Cashew Chipotle Aioli

Equipment

  • Vitamix

Ingredients

  • 3/4 cup cashews soaked for 4 hours in water
  • 1/2 cup water
  • 2 tbsp lime juice
  • 1/4 tsp sea salt
  • 3 whole chipotle peppers in adobo sauce
  • 2 tbsp avocado oil
  • 1/8 tsp smoked paprika
  • 1 tsp maple syrup sub monkfruit for keto

Instructions

  • Soak raw cashews in cold water for 4 hours, then drain and rinse.
  • Add cashews and all remaining ingredients to high-speed blender and blend until creamy.
  • Scrape down sides and taste. Adjust seasoning accordingly.
  • Serve immediately or refrigerate up to 5 days.
