Smoothie Bowls are totally my breakfast jam as of late! I’ve been drinking smoothies for so many years, and sometimes you just need a change! Enter the smoothie bowl, it makes you feel like you are actually eating a meal versus slurping down a beverage. It forces you to slow down and use a spoon to get up every last ounce of goodness in the bowl! Now, I still “drink” my fair share of smoothies but when I’m looking for a little something extra, this is it! Choose from any and all sorts of toppings, of course, you could easily double calories by adding on a bit too much, so I typically add just enough to give it some bite and a bit of fun. My favorite toppings include fresh fruit, unsweetened coconut flakes, cacao nibs, homemade granola, and/or some nut or dairy-free yogurt swirls.
The beautiful color of the smoothie bowl below comes from Blue Majik Spirulina powder which packs a nutritional punch but also can take a hefty bite out of your wallet, so adding it is completely optional.

Ingredients
- 1 cup water more or less for desired thickness
- 1 cup frozen cauliflower
- 3/4 cup frozen blueberries organic
- 1/2 frozen banana
- 1/2 cup raw cashews soaked for about 1 hour
- 5 oz unsweetened non- dairy yogurt I used So Delicious coconut yogurt
- 1 tbsp chia seeds soaked for about an hour
- 1 serving vanilla protein powder I used Ancient Nutrition brand
- 1 tbsp blue spirulina optional but adds beautiful color, antioxidants and phycocyanins
- 1 tbsp psyllium husk powder increases thickness and fiber
Instructions
- Soak chia and cashews in water for about an hour before blending. This is optional, but helps make the smoothie bowl thicker and creamier.
- Place all ingredients in high-speed blendar until smooth.
- Top with your favorite ingredients! I used organic blueberries, unsweetened coconut flakes and some of my chocolate sea-salt granola. Enjoy!
