I LOVE a good 15-minute meal! In fact, I always tell my clients to have at least 5 recipes they can make in 15 minutes or less for “food emergencies”. As a working mom of 3 girls with a husband who travels and kids who are involved in sports and extra-curricular activities, I know you need to have these go-to recipes in your back pocket. Enter Garlicy Beef & Greens.

A quick & simple dinner when you have no time to cook, but want homemade!

This recipe is great because not only do all of my kids love it, (my oldest doesn’t eat beef so I sub turkey when she’s around) but it is very flexible. You can add extra veggies, serve over various grains, and sub another animal protein or tofu/tempeh.

I try to “target” my red meat consumption. This typically means I eat beef 2-3 times a month. I try to time at least two of these servings during or right after my period as I am very prone to anemia. If possible I always use high-quality grass-fed/grass-finished beef. I also like to use regeneratively sourced beef products. The one I really like is by Force of Nature Meats and includes organ meats. I know many people can’t stomach liver/heart, but when it’s ground up in the beef you can’t taste it and it’s easier to “stomach”.

This meal tastes great over rice. If you are looking to go low-carb cauliflower rice or shirataki noodles are a good option. If you aren’t low carb I would go with organic jasmine rice that has been soaked and sprouted or at the very least well rinsed.

15-Minute Garlicky Beef & Greens

Ingredients

  • 1/4 cup coconut aminos sub tamari or a gluten-free soy sauce
  • 4 cloves garlic minced
  • 1 tbsp ginger minced
  • 1 lb ground beef ideally grass fed/finished
  • 4 cups greens chopped-spinach, kale, power greens mix
  • 2 cups purple cabbage sliced thin
  • salt & pepper to taste

Instructions

  • In a small mixing bowl combine the coconut aminos, garlic, and ginger.
  • Heat a large skillet with a little bit of coconut oil over medium-high heat. Add the beef to the pan, breaking it up with a wooden spoon as it cooks. Once it is cooked through transfer the cooked beef to a bowl and set aside.
  • To the same pan add the chopped greens and cabbage and cook until wilted and tender. Add the cooked beef back to the pan with the kale and season with salt and pepper.
  • Add the coconut aminos sauce and stir to combine. Let the sauce bubble and thicken for 1 to 2 minutes. Remove the pan from heat and divide between plates.
