Ever had the experience where you realize you are supposed to bring something to a party and you totally forgot?! Oh, and the party starts in 15 minutes. That’s what spurred the creation of these cookies. I never like to arrive at a party empty-handed. Not only does sharing the food prep for a party take a huge burden off the host/hostess, but I also know I can be a bit picky! I try to eat clean most of the time, have been gluten-free for 12 years now, and have a sweet tooth that I usually like to curb with healthy alternatives versus the typical sugar-laden desserts. Thus the creation of these 15-minute almond butter oat cookies. They have 5 ingredients and take 15 minutes to make. Perfect for the party, a snack for your kids, or guilt-free dessert.

Another great thing about these cookies is that the recipe can be easily altered to fit tastes/allergies. Substitute sunbutter for almond butter if your kid has a nut allergy. My daughter loves peanut butter so that is often a swap in our house. You can make them with or without chocolate, but I always add dark chocolate chips. In my humble opinion, dark chocolate is a superfood, not a dessert. f you are looking to bulk them up a bit add unsweetened coconut flakes, chopped walnuts/pecans, or unsweetened and unsulfered dry fruit. If you’d like to make this paleo you can try quinoa flakes, chia, or flax (just know I haven’t tried exact quantities yet) to replace the oats. You can also use a keto sweetener such as stevia or monk fruit to make them easier on your blood sugar. Just remember the tip to replace dry with dry and wet with wet.

Ingredients
- 2 cup almond butter
- 1/2 cup coconut sugar
- 1 egg
- 1 1/2 cup GF Oats
- 1/2 cup dark chocolate chips
Instructions
- Preheat oven to 350ºF (177ºC) and line a baking sheet with parchment paper.
- In a bowl, mix the almond butter and egg together. Then add sugar and oats until thoroughly combined. Finally, stir in chocolate chips.
- For each cookie, scoop one tablespoonful of the dough onto the baking sheet and flatten gently with a fork. Bake for 8-10 minutes. Let cool slightly before serving.
